Vietnamese Spring Rolls
Vietnamese spring rolls make a tasty and nutritious snack or appetizer. After being stuffed with cooked chicken, shrimp, vermicelli noodles, lettuce, and fresh herbs, they are wrapped in rice paper wrappers. These rolls are excellent with peanut sauce or hoisin sauce dipped in them.
Ingredients:
- 8 rice paper wrappers
- 1 cup cooked and shredded chicken
- 1 cup cooked shrimp, peeled and deveined
- 1 cup vermicelli noodles, cooked and drained
- 1 cup fresh herbs mint, cilantro, and basil
- 1 cup lettuce leaves
- 1/2 cup bean sprouts
- Dipping sauce hoisin or peanut sauce
Instructions:
Dip a rice paper wrapper into warm water to soften it
Lay the softened wrapper flat on a clean surface
Place a lettuce leaf in the center of the wrapper
Add a small portion of vermicelli noodles on top of the lettuce
Layer shredded chicken, shrimp, and fresh herbs on the noodles
Sprinkle some bean sprouts over the filling
Fold the sides of the wrapper over the filling, then roll it up tightly
Repeat with the remaining ingredients
Serve the spring rolls with your choice of dipping sauce
