Keto Caprese Omelet

Ingredients:

  • 2 large eggs
  • 1 tablespoon heavy cream
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup fresh mozzarella cheese, diced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon balsamic glaze optional

Instructions:

Mix the eggs, heavy cream, salt, and pepper in a small bowl with a whisk until everything is well mixed

In a nonstick skillet over medium heat, heat the olive oil

Pour the egg mix into the pan and swirl it around to cover the bottom evenly

It's done when the edges start to set and the bottom is just barely golden, which should take about two to three minutes

On one half of the omelet, put the chopped basil, cherry tomatoes, and mozzarella cheese

Fold the other half of the omelet over the filling with a spatula

For another one to two minutes, or until the cheese melts and the omelet is done, keep cooking

If you want, you can drizzle the omelet with balsamic glaze after moving it to a plate
