Pineapple Pulled Pork over Coconut Rice

Ingredients:
- 2 lbs pork shoulder, trimmed and cut into chunks
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup diced pineapple chunks
- 1 cup coconut milk
- 2 cups jasmine rice
- 2 cups water
- 1/4 cup chopped cilantro optional, for garnish
Instructions:
In a bowl, mix together pineapple juice, brown sugar, soy sauce, ketchup, Worcestershire sauce, garlic, ginger, black pepper, and salt
Place pork shoulder chunks in the slow cooker and pour the pineapple juice mixture over them
Add diced pineapple chunks
Stir to coat the pork

In a separate pot, combine jasmine rice, coconut milk, and water
