Pineapple Pulled Pork over Coconut Rice



This slow cooker recipe for Pineapple Pulled Pork over Coconut Rice is perfect for busy weeknights. It's sweet, savory, and tropical flavors meld together beautifully. The pork becomes incredibly tender from slow cooking in a pineapple-infused sauce, while the coconut rice adds a creamy and aromatic touch to the dish.

Ingredients:

  • 2 lbs pork shoulder, trimmed and cut into chunks
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup diced pineapple chunks
  • 1 cup coconut milk
  • 2 cups jasmine rice
  • 2 cups water
  • 1/4 cup chopped cilantro optional, for garnish

Instructions:

In a bowl, mix together pineapple juice, brown sugar, soy sauce, ketchup, Worcestershire sauce, garlic, ginger, black pepper, and salt

Place pork shoulder chunks in the slow cooker and pour the pineapple juice mixture over them

Add diced pineapple chunks

Stir to coat the pork

Cover and cook on low for 8 hours or on high for 4 hours, until the pork is tender and easily pulls apart with a fork

In a separate pot, combine jasmine rice, coconut milk, and water

Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is cooked and liquid is absorbed

Serve the pulled pork over coconut rice, garnished with chopped cilantro if desired
