Keto Broccoli Salad
A refreshing and satisfying keto-friendly broccoli salad with the sweetness of dried cherries, the saltiness of feta cheese, and the crunch of pecans, all tossed in a tangy dressing.
Ingredients:
- 4 cups chopped broccoli florets
- 1/4 cup dried cherries unsweetened
- 1/3 cup crumbled feta cheese
- 1/4 cup chopped pecans
- 2 tablespoons red onion, finely chopped
- 1/3 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
Chop the broccoli and put it in a large bowl
Add the dried cherries, crumbled feta cheese, chopped pecans, and red onion
To make the dressing, mix the mayonnaise, apple cider vinegar, and Dijon mustard in a separate small bowl using a whisk
Add the dressing to the broccoli and toss it around until it's well covered
Add pepper and salt to taste
Put it in the fridge for at least 30 minutes before serving so the flavors can mix
