Vegan Chocolate Espresso Brownies
Indulge in the rich and decadent flavors of these vegan chocolate espresso brownies. They are easy to make and require no baking. Perfect for a quick coffee-inspired treat!
Ingredients:
- 1 cup oats
- 1 cup almonds
- 1/2 cup dates
- 1/4 cup cocoa powder
- 2 tablespoons ground flaxseed
- 2 tablespoons espresso powder
- 1/4 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 1/4 cup dairy-free chocolate chips
Instructions:
In a food processor, combine oats, almonds, dates, cocoa powder, ground flaxseed, and espresso powder
Process until the mixture becomes a fine, crumbly texture
Add almond butter, maple syrup, coconut oil, vanilla extract, and a pinch of salt to the food processor
Process until the mixture forms a sticky dough
Transfer the dough to a mixing bowl and fold in the dairy-free chocolate chips
Line a square baking dish with parchment paper, leaving some overhang for easy removal
Press the brownie mixture firmly into the lined baking dish
Refrigerate for at least 1 hour to set
Once set, remove the brownies from the dish using the parchment paper overhang and cut them into squares
